How do I place two images next to eachother to look like one??

It is hard to tell exactly, but you can start by opening one, copying it to clipboard, then opening second, increasing canvas size, pasting the copied image and moving it into position.

its much easier to do with layers.

Is there a way to convert my images to 8-bit grayscale in RW Photo? Thanks in advance!

There is a Grayscale filter in the Adjust menu.

You can also configure a batch operation for this, but that may be a bit more difficult.
